Fruity Bar Cookies

I discovered this recipe quite some time ago, altered it to make it even better - and Kev and the kids LOVE these. Super easy to make with 'on hand' ingredients, and sure to be a huge hit with your family as well.
(you can double the ingredients for a larger family - which I always do)



Ingredients

½ c. room temp butter
½ c. brown sugar
1 c. flour
Ό t. baking soda
1/8 t. salt
1 t. cinnamon
1 c. rolled oats
Ύ c. fruit jam (any flavor)

Procedure

Heat oven to 350. Butter an 8" square pan. Mix all ingredients together except the jam - until mixture resembles course crumbs. Press 2 cups of the mixture onto the bottom of the pan. Spread the jam to within 1/4" of the edge. Sprinkle the remaining mixture over the jam, and lightly press in. Bake 35-40 minutes, and allow to cool on a wire rack, before cutting.

I will definitely be giving this one a try. It seems that we always have several jars of jams and jellies opened and taking up room in the fridge. When I get the urge to thin them out, this recipe looks like a great way to use them up. Can't wait to bake a batch of these. I might even try it tomorrow.
