Crock Pot Italian Meat Loaf
1 lb. lean ground beef
1/2 cup dry bread crumbs
8 oz. tomato sauce (I use Prego green pepper & mushroom)
1 egg
1/2 tsp. oregano
salt & pepper to taste
8 oz shredded mozzarella cheese
2 oz. parmesan cheese
4-6 potatoes, cubed

Mix together ground beef, bread crumbs, half the tomato sauce, egg,
oregano, salt, and pepper. Roll out on wax paper to form a 1/2 inch
thick rectangle. Sprinkle with mozzarella cheese. Roll up by starting
on short side. Lift wax paper until meat is rolled into a tight roll.
Seal edges and place in crock. Cover with remaining tomato sauce. Add
to crock pot: 4-6 potatoes, cut into cubes and tossed in melted butter.
Cook 1 hour on high. Then 8-10 hours on low. (Adjust temperature and times to your crock pot. My crock pot cooks a lot faster.)
