Dealing with an illness

This past week our family has recieved a really big blow. More so for my hubby than anyone else. He now has Diabetes. A few weeks ago when he was getting his yearly blood work done, his blood sugar was 202, but on Friday (the day we got the chilling news), it was nearly 400! 170 is the range our doctor wants him at. I kind of thought something was up when he started to drink a ton (and I mean a ton) of water and his eye sight was getting blurry. Two signs that it is diabetes.

Because he is also on Coumadin for his DVT and Metoprolol for his high blood pressure, his diet was pretty limited there and now it is even more limited. One good thing about this is that now us as a whole family will get much healthier. I have high cholesterol (my hubby's isn't too great, but nothing like mine) and my daughter's BMI keeps going up. Our son is the only one who would benifit from some weight gain. LOL. He eats just as much as us, but burns it off so fast. He is constantly on the move doing something, even if it is running around inside the house.

So Friday before I had to work, Steve and I spent awhile at the grocery store to get some things that he can eat. He is not much of a sweets person, he just loves Pepsi, which he hasn't drank in a week. I spent some time at the library and got a couple of cookbooks and a couple of guides, one for me and one written especially for guys with diabetes.

Yesterday was my first day cooking following the diabetic guidelines. I made a chicken and veggie stir fry with only a little bit of Enova. I added a dash of teriyaki sauce to mine. It wasn't bad, but I didn't finish. Steve had seconds. He is going to have to work on his portion control next. Dinner was a modified corn chowder using fat free and salt free ingredients. I added ham instead of bacon, and left out the potatoes. It wasn't half bad. Steve had seconds again and even had a bowl for lunch today. That is saying alot seeing how he is not a leftover type of person.

Now comes the hard part. I work 4 days a week from 3:30-9pm, so I am not home for dinner. I normally have something prepped for them to throw in the oven or microwave. But now I will have to take the time to plan out our menues more so than I use to. I just use to look at what we had inthe house and throw something together. Now I have to check and see whatthe carbs, salt and sugar are before I put the dinners together. I was never much of a label reader, I just usualy checkedthe fat content and the cholesterol. Now I have to check everything. Eventually I will get the hang of this.

Chantelle leaves for Florida on Tuesday. Well, she is supose to and we are suposeto get 10 inches of snow on Monday. So keep your fingers crossed that she can get off and on her little vacation with my mom. They are goingto go visit my grandparents (my moms parents) to help them get their papers in order and such. They will also be celebrating my grandfathers 88th birthday on the 20th.

Oh hun I am so sorry about the diagnosis. My friends 4.5 year old was also just Diagnosed.

I see your in MA..me too! We are getting 6-12 inches of snow also tomorrow!!
