Sunday 1/15:

B- Eggs; SS- Freezer Food (donated by a man in the church)

L-Leftover Roast and Biscuits

S-Snack Mix

D-Thick and Hearty Cheese Dip

 

Monday 1/16:

B-Oatmeal, Juice

L-2 whole chickens, Stuffing, Gravy, Mashed Potatoes, Green Beans

S-Muffins, Smoothies

D-BBQ Beef Sandwiches, Snack Mixes

 

Tuesday 1/17:

B-Pancakes, Toppings

L-Vegetable Beef Soup, Garlic Pizza Wedges

S-Popcorn, Hot Chocolate

D-Spaghetti, Peas

 

Wednesday 1/18:

B-Egg Casserole, Juice

L-Skillet Shepherd Pie, Broccoli, Golden Knots

S-Cooked Snack, Frozen Smoothies

D-Soup, Leftover Breads

 

Thursday 1/19:

B-Oatmeal, Juice

L-Tuna Noodle Casserole, Peas, Black Forest Pumpernickel Bread

S-Snack Mix

D-Quesadillas

 

Friday 1/20:

B-French Toast, Toppings

L-Pizza

S-Quick Bread, Cheese/Yogurt Spread

D-Leftovers

with all your dietary limitations in your family, do you make ALL this from scratch, pretty much? Or do you buy a fair amount of compliant prepared foods through your co-op? How much do your older children help with the cooking?
I have to admit, I take a lazy approach - especially to breakfast and lunch - we do a lot of cereal and sandwiches. I think I need to step up to the plate, pun intended, and do a bit more planned cooking (if I don't PLAN it, I'll stay lazy :-/ )

I make almost everything we eat. Looking through this menu the things that I buy already made would be:
-bread- good store bought wheat bread, make kamut for the boys
-stuffing- from a mix I buy through the co-op that is whole wheat (the boys don't like stuffing
-buns for BBQ beef sandwiches- whole wheat, make kamut for the boys
-spaghetti- I buys a wheat free noodle from the co-op we all like
-tuna noodle casserole- again the wheat free noodle
-quesadillas- I buy my tortillas from the co-op or health food store

I think those are the only bought things. I make everything else.

about your hearty cheese dip. What do you serve with it? Recipe?

Your menu makes me wanna come eat at your house. :)

Thick and Hearty Cheese Dip
Brown 1/2 lb. ground beef. Drain. Add 1 can Rotel tomatoes with liquid. Add 1 cup shredded Cheddar and Montery Jack cheese. Add about 1/2 cup Parmesan cheese. Stir until heated through. Add 1 tsp. oregano, basil & garlic powder. For really hot and spicy add 1 Tbl. cayenne pepper. Transfer to a crockpot and add 1 can cream of mushroom soup and 1 can of milk. Serve with Fritos.
