We didn't get any school done today, it was interrupted by the arrival of 5 new family members , 5 cute little kittens and we got to watch the whole thing, 2 light gray, 2 black, and 1 dark gray. it was great. Laney |

Crock Pot recipies

black beans: from cooks.com 1 lb dry black beans 1lb ham chunks, ham hocks, or sausage meat ( I use salt pork) 2 large onions 1 tsp cumin powder 1/2 tsp. chili powder 1 T chopped garlic 1 T butter or oil 2-3 drops hickory smoke seasoning 1 beef bouillon cube water to cover cook all together on high for 5-6 hours. garnish with pepper jack, monterey jack, or sour cream. I reserve 4 cups of the above recipe before I serve my family dinner so I can make black bean and pumpkin soup the next day, if i didn't do it before my husband and son would eat it all. this isn't a crock pot recipe, but I threw it in because it goes with the above recipe. Black bean and pumpkin soup- the urban homemaker 4 cups of the above recipe 1 can 14 oz diced tomato 1 small can green chilies 1 can pumpkin salt and pepper to taste 2 cups chicken broth you'll need a 2 qt pot or bigger. puree everything except pumpkin and chicken broth together, you might have to do it in batches, add puree to chicken broth and simmer 10 minutes , then add pumpkin and simmer for another 10 minutes then serve. garnish with pepper jack, monterey jack, sour cream or avacado. Asian short ribs. 3lb boneless beef short ribs 1 jar 7.6. oz plum sauce 2/3 cup ketchup 1 T rice vinegar 2 tsp ginger In large skillet, cook meat until brown on both sides, place meat in slow cooker, mix remaining ingredients pour over meat, cover and cook on low 6-8 hours. makes 6 servings taco chili 1 lb ground beef 2 15 oz cans seasoned tomato sauce with diced tomatoes 1 can 15 oz chili beans with gravy 1 can 15 oz whole kernel corn or hominy undrained 1 envelope 1.25 oz taco seasoning mix in a large skillet brown meat, drain fat , mix all ingredients together in slow cooker cover and cook on low 4-6 hours, makes 4 servings beef burgundy 2 lb beef stew meat 1 pkg 16 oz frozen loose-pack stew vegetables 1 can 10 3/4 oz cream of mushroom soup 2/3 cup burgundy wine 1 T quick cooking tapioca brown meat in skillet, drain fat, place vegetables in crock pot then add meat, then mix remaining ingredients and pour over top, cook on low 7-9 hours. makes 6 servings. beef and potato stew 12 oz boneless beef chuck, cubed 1 lb pkg frozen cut green beans 1 pkg 5-5 1/2 oz dry au gratin potato mix 1/2 tsp dried thyme 1 1/2 cup half and half or light cream combine all ingredients except half anf half in crock pot cover with 3 cups water cover and cook on low 7-8 hours or on high 3-4 hours, if using high heat setting turn to low and add half and half cover and cook for 15 minutes to heat through top with shredded cheese if desired, makes 4 servings. sweet and sour stew 1 1/2 lb beef stew meat 1 lb pkg frozen loose stew vegetables 2 cans condensed beefy mushroom soup 1/2 cup bottled sweet and sour sauce 1/2 cup water place ingredients in slow cooker, add ground red pepper to taste cover and cook on low 10-11 hours makes 6 servings. beef and beans 2 1/2 lb beef, trimmed of fat and cubed 1 can 15 oz kidney beans 1 can 15 oz great northern beans 2 cans 14 oz diced tomatoes with garlic and onions undrained combine all ingredients in crock pot, add salt and pepper to taste, cover and cook on low 8-9 hours makes 10 servings. Dill lemon chicken 1 cup sour cream 1 T dill 1 tsp lemon pepper seasoning 1 tsp lemon zest 4 boneless chicken breasts. combine sour cream, dill, lemon pepper, and lemon zest, spoon one quater of mixture into slow cooker, arrange chicken breasts on top in single layer, pour remaining sauce over chicken, spread evenly cover and cook on low 3-4 hours. can add 1 T chives makes 4 servings. south western chicken 2 cans 15 oz corn drained 1 can 15 oz black beans drained and rinsed 1 jar chunky salsa 6 boneless chicken breasts halves 1 cup shredded cheddar cheese combine corn, beans, and chunky 1/2 cup chunky salsa, in slow cooker, top with chicken, pour remaining salsa over chicken cover and cook on low 7-8 hours sprinkle with cheese cover for 5 minutes for the cheese to melt. makes 6 servings. cran-apple chicken 6 boneless chicken breasts 1 cup fresh or frozen cranberries 1 green apple peeled cored and sliced 1 T brown sugar 1 cup unsweetened apple juice or cider place chicken in slow cooker, sprinkle with cranberries and apple, mix brown sugar in apple juice, pour over chicken and fruit, cook on low 6-8 hours. makes 6 servings simple chicken 4 frozen boneless chicken breasts 1 pkg dry Italian dressing mix 1 cup warm water or chicken broth place chicken in slow cooker, sprinkle with dressing mix, pour water over chicken, cover and cook on low for 8-10 hours makes 6 servings. oriental chicken 1/2 cup soy sauce 1/2 cup honey 2 T sesame seeds optional 6 boneless chicken breasts mix together soy sauce, honey, and sesame seeds, place chicken in slow cooker, spooning 2 T of soy-honey mixture over each breast, pour any remaining sauce over top, cover and cook on low 4-6 hours. makes 6 servings chicken taco filling 1-1 1/2 lbs frozen boneless chicken breasts 1 can 14 oz diced tomatoes with green chilies undrained. 1 envelope taco seasoning mix place chicken in slow cooker, mix and add remaining ingredients, cover and cook on low 6-8 hours, makes 6 servings chicken and dumplings 1 lb boneless chicken breasts, cubed 1 lb frozen vegetables of your choice 1 med. chopped onion 2 jars 12 oz each chicken broth 1 1/2 cup butter milk biscuit mix combine chicken vegetables and onion and chicken broth, reserve chicken broth plus 1 T broth, in slow cooker. cover and cook on high 2 hours, mix biscuit mix with reserved broth until moistened, drop by tablespoon fulls over hot chicken and vegetables, cover cook on high 10 minutes uncover, cook on high 20 minutes longer, makes 6 servings. honey-mustard chicken 6 med. sweet potatoes cubed 1 sm onion cut up 2-21/2 lb skinless chicken thighs and or drumsticks 3/4 bottled honey-mustard salad dressing 1/2 tsp dried rosemary, crushed place sweet potatoes and onion in slow cooker, place chicken pieces on vegetables. mix salad dressing and rosemary, pour over chicken, cook on low 7-9 hours. makes 6 servings. chicken barely soup 1/2 pearl barely 1 sm stewing chicken 2 carrots cut up 2 stalks celery cut up 2 T parsley combine all ingredients in slow cooker, cover with water, cook on low 4-6 hours, remove chicken from bones, return chicken to soup, continue cooking until barely is soft, makes 5 servings chicken and rice 1 can cream of chicken soup 1 envelope dry onion soup mix 2 1/2 cups water 1 cup long grain rice 6 oz boneless skinless, chicken tenders combine all ingredients and black pepper to taste cover and cook on low 5-6 hours stir occasionally makes 6 servings. chicken jambalaya 1 pkg 16 oz frozen loose pack pepper stir fry vegetables 8 oz boneless chicken breasts cut in 1/2 in stripes 8 oz smoked turkey sausage halved lengthwise, cut in 1/2 in pieces 1 can 14 oz diced tomatoes with jalapeno peppers, undrained 1 pkg jambalaya rice mix place vegetable in slow cooker, top with chicken and sausage, add 2 cups water, tomatoes, and seasoning packet from rice if present, cook on low 5-6 hours, stir in rice mix, turn to high, cover and cook for 45 minutes longer until most of the liquid is absorbed and rice is tender, makes 6 servings. My kids are on a count down to spider man 3. Every morning we wake up it's, momma, momma what day is it, oh yippee 4,3,2, days until spider man 3. hmmmm I wonder if I can do something about spider man in school. OH! I can, I can, we can examine spider man's actions, and see what community helpers are the ones responsible for doing that. We can look at spider man's abilities and see what simple machines or other human inventions could help people do what he does. We can research spiders and see how they really effect humans. hmmmm I'm stuck on what else we could do, anybody else have any ideas? Laney. |

My husband is getting one heck of a promotion! Woohoo! When he's all through with his training session he's eligible to go to a very expensive place and get IT certifications paid for by the company. He's been to that place they gave him a quote of 7 grand if he was going to do one cert. on his own. Anyhow higher position, higher pay scale, bigger benefits, bigger bonuses, less contact with unhappy people and more management type work, makes for a happier, less stressed out hubby. HMMM, I've been traveling around on here reading people's blogs there is a lot of meal planning and recipe trading so I thought I would give it a shot. My Husbands 2 favorites are meatloaf: hamburger, small can tomato sauce, worcestershire sauce, diced green bell pepper, diced celery, diced onion, egg, crackers, thyme, and marjoram. the amount of ingredients depends on you preference and family size, I have 6 in my family so I use 2 lbs hamburger, 1 s. can tomato sauce, 1 medium bell pepper, 2-3 stalks celery, 1 s. onion, 2 eggs, half pack any kind of cracker ( I usually use ritz),I don't measure the thyme and marjoram I just turn it over and give them three shakes, and my hubby is a W. sauce lover he keeps them in business so I don't measure it I just pour it over my mix in a zig zag motion from one side to the other.knead all ingredients together and put it in the oven @ 350 for 1 and a half hours. If your hubby is a spicy food lover add kick to your meatloaf by trading half of the hamburger you need for ground sausage. Roast: this one is very, very easy. onion, roast, garlic, crock pot. cut onion put on bottom of crock pot, sprinkle garlic over bottom of crock pot, put roast on top, cook on high till done, which depends on the size of your roast mine are usually done in 4 hours and are almost always 2 lbs. I usually pick a good marbled roast so my roast will be real juicy and I can have lots of drippings left over to make my gravy. I use arm roast most of the time, but I also use chuck roast sometimes. my kids favorites hamburger casserole: 1lb ground hamburger, 1 can tomato soup, potatoes, 1 can green beans. brown hamburger put in baking dish cover with tomato soup, pour in green beans, boil and mash potatoes then place them on top of green beans, place in oven @ 325 for fifteen minutes. ground beef stroganoff: 1lb ground beef, 1 s. onion, garlic, black pepper, 1 can cream of mushroom soup, 3/4 cup sour cream, brown rice. brown hamburger w/onion, sprinkle on the garlic and brown pepper, add cream of mushroom soup, simmer for 10-15 minutes add sour cream heat through serve over cooked brown rice, or noodles. black beans: 1lb dry black beans, 1lb ham chunks, ham hocks, or sausage meat( I use salt pork) 2 onions chopped, 1 tsp ground cumin, 1/2 tsp chili powder, 1 tblsp garlic, 1 tblsp butter, 2-3 drops hickory smoke seasoning, 1 beef bouillon, cover with water in crockpot cook on high for 5-6 hours. top with monterey jack or pepper jack, and/or sour cream. I use my left overs from this recipe to make this next soup recipe. black bean and pumpkin soup: you will need 4 cups of leftovers from the previous recipe, 1 can 14-15 oz diced tomato, 1 s. can green chilies, 2 cups chicken broth, 1 16 oz can pumpkin, salt and pepper to taste. puree bean mix, tomato,and chilies, add to chicken broth, add pumpkin heat through and serve. you will need a 3qt pot or bigger and you might need to puree the mix in batches. top w/ sour cream, monterey jack, pepper jack or avacado. ground turkey meatballs: 1lb ground turkey, 1/2 cup milk, 1 m. onion chopped, 1 m. potato grated, 1/8 tsp all spice, 1/8 tsp nutmeg, both optional, dash of pepper, 1/2 c bread crumbs ( I use crackers) tsp salt or less, 1 can cream of mushroom soup. mix all ingredients except soup. if the grated potato is watery, squeeze out liquid. form the balls, dip into flour, and brown well. put into baking dish. pour the soup over the top and bake 30-45 minutes @ 325. these meatballs are light and fluffy, be sure to flour them well, or they will fall apart. I have to double this recipe to have enough for my family of 6, because they love this recipe soooo much. chicken stuff ???? over rice chopped chicken breast, cream of chicken and cream of mushroom soup,2 tsp butter,salt and pepper to taste, brown rice. cook chicken add soups and butter, simmer for 10-15 minutes serve over cooked brown rice. I add garlic,onion,or cumin in this depending on whatever mood strikes. just a sprinkle or two. roast and rice cover roast with water and cook in crock pot n'til done,take roast out and pull apart, return to crockpot and add cream of mushroom soup, drizzle worcestershire sauce and soy sauce in zig zag motion from one side to the other one pass,toss in brown rice and serve when rice has cooked. you can cook in beef broth for a beefier taste and add garlic, cumin, or crushed red pepper as options. ground beef stroganoff, black bean recipe,and ground turkey meatballs come from cooks.com and black bean and pumpkin soup recipe comes from urban homemaker it's ingredients were so similar to the black bean recipe i just decided to make my soup w/ the leftovers of the black bean recipe. these sites are great to visit when you or your family are tired of the same ol' same ol'. Our day trip

Our trip took us back to our home town, Sand Spring Oklahoma. A lot had changed they had torn down about 100 or so houses in the old town and a huge old manufacturing building, it was odd to see all of it gone, there are suppose to be using the cleared land to bring in the big business' to make a shopping center with things in it like lowe's and kohls and other places like that. Our 1st stop was at my grandmother-in-laws, they had lost their dog Mcdoogle Mctavish "Doogie" for short, :( very sad, they had just got him about 8 months before I met my husband while he was living with them, so I had known him since he was a pup, and we had lived with them for a time so we had grown attached to say the least, so sad.. Next stop was my father-in-laws house, nothing new over there, the big kids get to go back and stay next week with them. Next stop was my parents house, my baby brother is in c.a.p. "civil air patrol" he's going to be 16 in july, he got his first promotion "stripe", Yeah! One brother with his head on straight. Last stop was dinner at Texas Roadhouse with the kids Godfather, some steak dinners and conversations finally leave 10 o'clock at night to get a home at midnight. When we got home my booty " loot" consisted of a telescope, lots of new clothes, a kitchen aid stand mixer, corning (sp?) baking dishes, a big sack of stationary paper, colors, pencils, pens, etc..., and 50 dollars in cash, and it wasn't even my birthday. Thats usually the way it goes on one of our trips up to the family, in fact my entire house is filled with give aways, and presents. Welp that's the end of my day trip story, drop by again sometime. I am surprised I even know what day it is, usually the only thing I know is hmmm hubby went to work must be a weekday or hubby stayed home must be the weekend. Since we started home school friday just isn't that significant to us anymore or any other day really, my kids are still begging to do school work or an experiment or be backyard archaeologists, and so on whether it is weekend or not. They don't even have the tgif family friendly shows on anymore, so friday is just an ordinary day anymore in our house. However this friday is an eventful friday because we get to go on a trip this weekend, not that far and just a one day trip, but we get to go somewhere, tell ya'll about it when I get back. Laney. |

It just dawned on me...

That my 1st blog entry should have told ya'll about me and my family. I am 26 years old, I stay home with my 4 kids, cheyenne 8 "nanny", clayton 6 "bubba", lacey 2, and kaylin 1. Once upon a time I was a certified nurse assistant. ( by the way never put your family in a nursing home I have worked in ones that cost thousands a week down to state funded, they are all seriously horrible. I can tell you the horror stories if ya wish.) Anyhoot. My husband is 28, works for Dell, is fixin' to finish his bachelors degree for information technology, and he's tryin' to decide if he wants to stay in for his masters degree. my biggest baby "nanny" plays softball, and loves makin' things with her knittin' loom, art, and sharin' Jesus with anyone who will listen to her, my next baby "bubba" he's all boy, if it creeps, roars, soars, stinks, or gets you dirty he's up for it, he also likes makin' things with a knittin' loom, he loves to be outside so much that he would sleep out there if I let him. (even if it were rainin'.) My 3rd baby Lacey she likes to do anything her nanny does, I constantly find her tromping around in her nanny's dress shoes and beggin' her nanny for paper and colors so she can do what nanny is doing, she's my genius baby ( not bragging) she is already doing things my big kids couldn't do until kindergarten or later. ( I know it is because she is a sponge and is absorbing all the learnin' going on in her environment.) My youngest baby is 13 months younger than lacey, and is lacey's shadow, whatever lacey is getting into kaylin is getting into, she tugs around a baby doll and whines around when she wants to be included in the colorin' and book readin'. We live in Oklahoma, I'm pretty sure most ya'll already assumed I was from the south anyways, cause my accent even shows up in my typin'. We go to church every Sunday, we serve with kids 6 years- 3rd grade, we LOVE our LORD JESUS CHRIST and we try to live in him everyday. we like to travel, though we don't do as much as we would like to afford to do, we have been to South Padre Island, Mexico, Seattle Washington, multiple places in Missouri, and we were married in Eureka Springs Arkansas, and go back there to show the kids where we got married when we can. The big kids and I have been to California for the Rose Bowl Parade very fun, my kids were tiny when we went, they remember they have been to California to see a line of flowery things, where bubba had to get staples in his head due to a screw stickin' out of a wooden swing, and that grandma got pulled over in Arizona, they remind her every time she is going a little to fast, "grandma don't you remember getting that warnin' in Arizona?" I love math-u-see

Ya'll are gonna start thinking I'm getting paid to advertise on here, but I am not. math-u-see has literally changed the world of math for my daughter. She's in third grade now, and her dilemmas with math started with her 1st grade public school teacher, this lady gave bad teachers a good name and I can explain why if any care to hear. Anyhoot, Math made her feel serious self esteem issues just from hearing the word, so I searched for alternatives to the math program we had and ordered the free samples that were offered and decided on math-u-see, because even if it didn't work I wouldn't be crying in the corner about how much money I wasted, not to mention I am seriously horrible at math and the demo was teaching me things that helped me understand algebra so needless to say I was sold. Oh in all this rambling I almost forgot I actually got on here to tell ya'll my gorgeous girl looked at me today while she was finishing her lesson and said momma I love math now, I don't feel stupid or shy anymore, math is easy. Zoo trip.

I am one of those wacky and zany moms, I can make all sorts of animal sounds and when we go to the zoo my kids enjoy it because I can get almost all the animals to respond. Well on our last visit we decided to invite one my husband's friends from work and his 4 year old daughter. Our first stop was the Indian elephants, my kids turn to me and start begging momma, momma make them talk, so I made my elephant noise, which made the elephants come over and start chatting with us, this little girl had climbed her daddy, dug in her nails, and was looking at me like what in the world are you. She wasn't scarred of the animals she enjoyed that I could get them to talk, she just wasn't sure what I was, each different animal noise I made she would hide behind her daddy and start looking me all over, it looked like she was looking for my trunk or my other animal parts to see if I was actually the animal that makes that noise. At the end of the trip we stopped at the duck pond and I had all the ducks yammering and I turned to ask her if she had fun with us and if she was going to come with us again, she ducked behind her daddy, stuck her head through his legs and shook her head no. I don't think she was actually scarred of me, just couldn't figure out if I was mommy, elephant, monkey,duck, etc... Laney. |

Where in the world does all the time go?

I don't know about ya'll, but as soon as I wake up in the morning, I already feel like I have wasted time. How are you supposed to get everything done, you have to clean house, you have to do school, you have to get in some playing, and errands and phone calls, you have to squeeze out time to feed the family a good meal, and time to supervise the kids chores, then come the extras, church, serving, extra curricular activities for the kids, play dates on and on and on. My head hurts so bad thinking about, I can actually feel it going numb. How do you achieve the satisfaction of a day well done by the time it is time to go to sleep? I know I am not the only one out there that feels like this, most days I find myself saying, I am not going to touch that, I just picked it up or cleaned it etc.. 30 seconds ago, if I do it again now I will burst, 5 days later it is still there and it has gathered friends, maybe if it's like my house even decided to throw itself a little block party. How do you get past the point of feeling like your dragging on and on, like you can't get it done and keep it done so you might as well not even do it. Don't get me wrong I do it anyways, but it sure can drain every last inkling of energy from you, and it smacks you in the face at the end of the day, when you didn't get everything done and you just have to somehow add it to tomorrow's duties. One of these days I am going to find that little time sucking troll and shake him upside down for my substantial refund. Laney. P.S. No I am not burning out or having a nervous breakdown just ranting. I will however, freely accept advice, as long as it doesn't tell me to wake up at 4 in the morning cause as it is I don't go to sleep until 1 in the morning. |
