Lunch today...

We were blessed with a gift of freshly butchered chicken yesterday. Free-range and almost organic.


So for lunch we had chicken stew and steamed bread. The chicken was so good and tender! I will have to thank our benefactor again for the chicken!


This was what went into the big soup pot.

After I washed the whole chicken twice, I put it in a big pot of cold filtered water.

Then I threw in onions, garlic, carrots, celery leaves and ribs and a bunch of fresh herbs we harvested from our garden yesterday (parsley, basil, thyme, rosemary) and coarse sea salt. The moment the stew was boiling, I reduced the heat to low and let it simmer for an hour. Before the hour was up, I threw in the potatoes. I forgot about them earlier on, LOL.


Easy, huh? Since the children didn't care for too much pepper, dh and I ground our own black pepper over our steaming soup. Yummy.
