Casserole Cheatsheet

What's for dinner?  Don't you hate it when it's 3:00 and you are asking yourself that question for the first time?  I read this in a Tightwad Gazette a few years ago and had almost forgotten it.  It is basically a casserole cheat sheet-- you use the ingredients you have or like and can make up your own casserole.  If you are an organized person (ahem!) you could plan it ahead of time and buy the ingredients at the store.  Otherwise, you can hope you are like me and always have a can of cream of something soup in the cupboard for emergencies like these.

1 cup main ingredient
1 cup second ingredient
1-2 cups starchy ingredient
1 1/2 cups binder
1/4 cup 'goodie'
Seasoning
Topping


Translation:

Main ingredient suggestions:
tuna, chicken, turkey, ham, seafood, ground beef

Second:
celery, mushrooms, peas, corn

Starchy suggestions:
thinly sliced potatoes, cooked noodles, cooked rice

Binder:
cream sauce, sour cream, can of cream of something soup

Goodie: (optional)
pimiento, olives, almonds, water chestnuts.

Toppings:
potato chips, cheese, bread crumbs


Thoroughly mix your combinations of the above ingredients. If it seems dry, add 1/2 cup milk or stock. Place in buttered casserole dish and bake at 350* for 30 to 45 minutes

Thanks! That's pretty much what I do when I make up a casserole, you really can usually make one up on the spot with normal stuff you have :)

Thank you so much! I've been looking for something like this. I'd like to start freezing more casseroles ahead of time, but have had a hard time finding recipes that look good. THANK YOU!
