We're not vegetarians, not in the least. (i adore the taste of chicken, tun, and an occasional great steak...yum!) But I do try to go meatless a couple days a week. That doesn't have anything to do with anything, but just an FYI.
Anyway, I came across this fab blog today Vegan lunchbox which is all about packing healthy (vegan) lunches for your kiddo. Now, homeschooling doesn't have a lot of need for sack lunches. Yes, field trips, nature outings, etc... but even eating at home on a plate and placemat, could benefit from said website. Check it out!
One thing I've had to do while living here in Hawaii (besides paying out the nose for meats and milk) is to just suck it up and pay a higher price for pre-cubed melons. My daughter loves melons, all kinds. I can't stand them at all (watermelon I can tolerate enough for a piece once a year or so) and my husband likes them well enough, he's just not home enough to eat it. So, after too many times of a melon going to waste, I decided to just buy it in the pre-cubed fruit bowls in the produce section. It works out great actually. It all gets eaten, nothing is wasted, so no money is wasted either. My daughter gets to choose whichever fruit bowl she'd like and we're set (they offer a few different mixes.) Of course, we do eat regular whole fruits too (bananas, apples, grapes, pears, oranges, etc) but melon was an issue. This simple solution worked. Yes, it is a bit more expensive than buying a melon and just slicing it myself, but I despise the waste/leftover... she can't eat it fast enough.
A cool place I found (linked from the Vegan Lunchbox website) for nutritional lunch ideas was Laptop Lunches. I'll wait and see how much out-and-about we do in our new location, to see if it might warrant their nifty lunchboxes. But I LOVE their lunch ideas!!!! My daughter pretty much makes her own lunch each day but I'd love to give her some more simple ideas. This is fabulous! |
