Beerocks

 

An easy to make, freezable and easily-reheated entrée.

 

In a large mixing bowl, combine the following and allow yeast to activate:

 

5t yeast

¼ c warm water

1t sugar

 

Add to the above:

 

2 1/2c water

1/3c oil (I use olive oil)

1t salt

7-8c flour

2 eggs

 

Mix until dough is soft.  Cover and rise one hour; punch down and knead.  Rise again.

 

Brown and season with salt:

 

2lbs ground beef

 

Saute and add to ground beef:

 

½ chopped onion

1 cabbage, shredded

 

Make sixteen balls from the dough.  Flatten each ball into a square and fill half the square with ground beef mixture.  Fold dough over and pinch edges.  Bake at 400 degrees for 15 minutes or until beerocks are lightly browned on top. 

Freeze if desired.  Beerocks can be reheated from frozen in the microwave for one minute.

Here in England they have something very similar called a 'Cornish Pasty'. That also has small diced carrot, potato, and swede or turnip in it as well as the meat and onion. It really makes it a complete meal in a pastry pouch. They were made years ago by the miner's wives to send down into the mines with the men. It would be hot and keep them warm on the way to work, it would have cooled by lunchtime. It was easy to eat in the mine without tables and chairs to sit down to eat and provided a complete meal to keep them going till they got home for a cooked dinner! Thought you might like the history lesson that my MIL gave me years ago. She and my FIL grew up in the mining community in Cornwall and Wales.

We love them! But our recipe, from More-with-Less cookbook, calls them Bierrocks; my hubby calls them Mennonite eggrolls, and always eats too many! To cut down on the time needed to make individual ones, I sometimes make a large log-shaped one and cut it into portions after it cooks.

Thanks for the recommendation on the Salton yogurt maker. Mark ordered one for me for Mother's Day, and so far, so good!
And yes, the Vaseline came out... after days of no baths, it sort of just evaporated! :)

Thanks, Kendra. I should have checked out your blog yesterday when I was trying to figure out what to make with pizza crust ingredients, hamburger and cabbage. Unfortunately, I was missing the onion. It sounds good. I think I'll try it with the cornish pasties ingredients that deedeeuk suggested too. Pasties are a little different (more of a pie crust), but I love them. In Jamaica they have something similar to pasties, but they have a spicy kick to them.

I've been trying to think of something to take with us for after church on Sundays. This might be just the thing. I can put it in one of those bags at Walmart that keep hot things hot and cold things cold. Too bad our van didn't come with a microwave!

These look delicious, but I'm not a fan of ground beef. Is it possible to use different fillings, while maintaining the outside. Like chicken and cheese? Do tell! Thanks!!

It's basically a pizza-like dough, although I make pizza dough with olive oil. Last week I made calzones with cooked chicken, BBQ sauce, smoked gouda, mozzarella, and red onion.
