I have a daughter with autism. I had been told by her autsim social worker that some children respond to a Gluten-free, Casein-free diet. I did some research and decided to give it a try. (My daughter made wonderful progress)!
Gluten is the protein found in grains: Wheat, regular flour, barley, rye, spelt, etc.
Casein is the protein found in dairy: Milk, cheese, yogurt, etc.
When my younger daughter turned four-years-old I knew I would be making her a cake for her birthday. Somewhere I read that it was possible to use flower-pots to bake a cake. (and turns out, that’s VERY possible! Pictures below)!
But here is the "catch"…I had to bake this cake without flour, butter or milk. There is also no eggs or sugar, it’s very allergy friendly! Everyone loved it! No one had any idea that it wasn’t just a regular cake, and it was fun to see the looks on people’s faces when they found out what they had eaten!!
This recipe makes aproximately four cakes (but you only bake one at a time)
STEP 1 – Preparing the cake mix:
6 c rice flour
4 c sorghum flour
2 c tapioca flour
1 c potato flour
4 c xylotol
4 c coco
1 c powdered sugar
(Recipe for powdered sugar: xylotol and arrowroot starch mixed together then run it through a vitamix or clean coffee bean grinder)
Mix the above ingredients together very, very well. Divide into portions that are 4 and 3/4 cup each and store in quart-sized freezer bags (divide any leftovers evenly between the bags).
Add to each bag:
3/4 tsp salt
1.5 tsp baking soda
1.5 tsp xanthan gum (or guar gum)
3 TBSP dry milk substitute (I use Better then Milk – Rice, but you could use DariFree)
Mix oil, water and honey. Then add the bag of cake mix and beat for two minutes. Cake batter may not be "runny" like a store-boxed cake, it may turn out more "dough-like" and that is okay. You can use a wet spacula to press it down into a pan.
I normally bake mine in a round Pampered Chef stone, but have also used a flower pot! Be sure to grease and flour the pan before hand if you are using a regular non-stick pan (unless it is very high quality). Bake at 350 for around 15-20 minutes!
