Cooking! 8/10/07
One of my friends on my Christian Moms' email lists said that all of her girls cook. This really inspired me, as I love to cook and I had always said that I would teach my children to cook. I decided to teach one girl at a time, so they could each make a meal by themselves from start to finish.
K. made her meal first. She made pumpkin tortellini with rosemary-lemon chicken. It was fabulous!!!

The recipe for K's meal is as follows:
2 packages fresh pumpkin tortellini (available in specialty stores)
4 T. pumpkin marmalade
2 T. butter
2-3 fresh bay leaves
2-3 t. rubbed sage
Cook the tortellini according to instructions. Drain. In a sauce pan, melt the butter with the marmalade over low heat. Stir constantly. Add the bay leaves and sage. Keep stirring for a few more minutes, until everything is well blended. Toss into the tortellini.
The chicken we bought already marinated with the rosemary-lemon sauce so we just baked it at 375 degrees F, covered with aluminum foil, for about 30 min. I made a caesar salad with this, but I think you can also use sauted veggies.

L. cooked for the family next, and she made a simple Vietnamese meal--tilapia baked in fish sauce.

The recipe for L's dish is as follows:
1.5 lbs tilapia
3 T. concentrated Vietnamese fish sauce (nuoc mam)
1 t. red chili sauce
1T. apple cider vinegar
1.5 c. water
3 T. sugar
Boil the water in a saucepan. When the water is at a rolling boil, add the sugar and lower the heat. Add the fish sauce, chili sauce and vinegar. Keep stirring. Lay the fish in a single layer in a baking dish. Pour the sauce over the fish and bake at 350 degrees for approx. 10 min. Serve with hot white jasmine rice. You can make more of that sauce and add it to the fish after it has baked. We usually eat this with a salad. It is a very light meal.

A's cooking day was today, and she made chicken tikka masala.

The recipe for hers goes like this:
1/2 jar Patek's tikka masala curry paste
16 oz. sour cream (we use Horizon organic)
1.5 lbs. chicken thighs, cut up into bite sized pieces
Mix the curry paste with the sour cream in a large bowl. Add the chicken pieces to the bowl, mixing to cover all the pieces. Pour into a baking dish, making sure that there is a single layer of chicken. Bake at 375 degrees F, for approx. 35 min. (basically until the chicken is cooked). Serve with hot white jasmine or basmati rice. We typically eat this meal with saag paneer (we can buy this frozen) and naan.

Yay! The girls were all so proud of themselves. These aren't the most complicated dishes, and I am aware that using jarred sauces renders the dishes in-authentic. But these are meals we eat pretty often and they are delicious and therefore, who cares. 
We're looking forward to more cooking from the girls and from FQ when he's old enough.
