It is not what goes into a man that defiles him
But it sure does mess with his blood sugars.

Since my husband was diagnosed with Diabetes, our eating habits have certainly changed. We are more cautious with our what we bring into our home and our bodies. As a result, my husband's insulin shots have decreased dramatically. When we left the hospital, he was to take at least 4 units of Humalog before meals (this was the base on the sliding scale, if his blood sugars were higher, he would have to add more units) and 30 units of Lantus before bed. In the past two weeks, he has only needed the Humalog a few times usually before dinner and he takes no more than 20 units of Lantus at night.

We are still on the learning curve, but I will explain a little of our regular meals. Mind you, I have experimented with Raw Vegan dishes for the last two years. I have only inflicted this on my family for two or three nights a week at the most. Usually I would then reward my patient family for trying "rabbit food" by getting a nice big Papa Murphy's pizza the next night. OK, not always, but it has been a favorite of our family recently. Well, till January anyway.

Our family is not vegetarian. It wouldn't break my heart if that ever happened, but my Rancher Grandfather would roll over in his grave. However, we have reduced the amount of meat we eat to four days a week, maybe five. Most of our meals are Raw Vegan dishes. Here is a typical day:

Breakfast: freshly juiced fruits (Jack LeLanne Juicer from Costco is pretty darn cool), fresh fruits, and various nuts (excluding peanuts).

Lunch: Hard boiled eggs, big salad with all kinds of cool veggies. The kids and I will have peanut butter and jelly sandwiches sometimes.

Dinner: Here I experiment with a Raw Vegan dish. One night, we had (soaked & drained) garbonzo beans with carrots and celery and whatever else I put in it. Sometimes we have chicken, turkey bacon, or a good steak.

Snack: Kids and I will have fruit, yogurt, peanuts (not many of these, these are daddy's new candy), my USANA Shakes & Bars, whatever we find. Daddy has celery, carrots, peanut butter, pumpkin seeds, diet Root Beer, Mejool dates, peanuts, a couple of USANA bars & a shake.

Our meals tend to be low glycemic, so his blood sugars aren't spiked. Willy's first hypoglycemic episode (very low blood sugar) was really odd. He was shakey, sleepy, sweaty, and we were clueless. For being such intelligent people, we over look some obvious signs! He ate some raisins and other sugar things. We over did it and he went high. Yikes!! We have since learned what works to elevate his blood sugars when he is low, but more importantly we have learned to monitor his insulin to not force him into a hypoglycemic state. This is how he has been able to go nearly two weeks without many Humolog shots.

For the most part, his blood sugars remain low through-out the day. Since we have low-glycemic meals, he doesn't need an insulin shot to lower his blood sugars more knowing it isn't going to spike anyway.
The evenings aren't as low unless he has some exercise that day. When he exercises, his blood sugars go down significantly. It isn't always possible to get in a good bike ride or a few minutes on the elliptical, but when he does it is amazing how his body responds.

How awesome is this creation of our Lord's? The human body is a wonder beyond many! Even in the face of a disease, the Lord has given small miracles to help the body function the way it should. Praise Him!!

Dessert, Anyone?

For dinner tonight, I ran out of ideas. We had such a fancy breakfast and lunch that nothing really sounded good, except a dessert or two. I do have a sweet tooth. Dark chocolate tempts me the most. Mix it with lavender and cranberries, oh my is that ever so tasty.

That really isn't the dessert we had tonight. I have a raw, vegan dish with most meals. (This could be a simple as a salad or chopped veggies.) About once a week or so, I have raw, vegan night. Tonight ended up being one of those.

When dinner rolls around, my children are usually in the kitchen or on the counters helping me out. My boys love cutting up veggies and mixing an exotic raw dish. They may not always eat it, but give it a good faith effort. Usually, they eat while they cut up the veggies. Jet will eat squash that he is cutting, but when it is in the bowl with other veggies and a dressing he snubs it. I don't get it, such is a three year old!

Tonight, we chopped up some fruit. Made some ice cream. Whipped up a custard. Mixed little "candy" balls. Here is the picture:


At the top, we have Apples-Pineapples. The Pineapple I found at Costco for a great price and it was juicy and sweet. YUMMY! Going clockwise - some coconut for sprinkling on whatever, cranberries, pomegranate (YUM), chocolate custard, almond butter candy, banana and strawberry ice cream, and raisins in the middle. The chocolate custard is made with Tahini, carob, dates, a little water and maple syrup. The almond butter candy is made with almond butter, coconut, dates, honey and a tad bit of olive oil. Actress made the ice cream with frozen bananas, frozen strawberries, a little water and some vanilla extract.

Everyone loved dinner. The only non-raw thing we had was hot tea. There was no sugar (save the honey and syrup in two things), so I don't feel bad that we had dessert for dinner. This could have passed for a great nutritious breakfast.

I enjoy adventures in raw-vegan foods. Our family is not 100% raw-vegan. We like steak way too much and bread with creamy (real) butter is pretty cool, too. However, as far as health benefits go, we try to be 60% or more raw (veggies, nuts and fruit).

It was such on odd dinner that I just had to share.

Luis

Life happens in moments. Time is used perhaps to measure moments. And time is necessary to get things done, like grocery shopping. But those chance encounters happen in moments. People literally flit in and out of others lives whether they stay for a bit or pass through. My kids and I had one of those moments in the most necessary of times.

Thursday was a wild day of meetings, basketball practice, a library trip we ended up missing, visiting with friends, gymnastics, and the dreaded trip to the grocery store. After a good visit with my friend (her daughter and mine are close and I just enjoy the time I spend with them - we always have a good laugh), it was time to pile my kids in the car and take the trip to the grocery store. I knew I would be there an hour, at least. It was freezing cold! I am driving a huge 4x4 as my economic minivan will get stuck in my driveway. So I park way far at the back of the parking lot and carry my two year old all the way to the store. At least he is warm!!!

Naturally, as we approach the store, my precious and strong willed child sees the racing cart. You know the ones; difficult to steer, dirty, basically behemoths of a cart that every child wants to ride in. I allow it, we are going to spend a lot of time here after all. He picks out the "blue" one, which really turned out to be yellow. (Colors will be our next lesson.) I plop him in the "car" and head off to get junk food for Sunday and healthy food for the rest of the time.

I tend to get very focused on what I am doing and forget to notice what is going on around me. My daughter happens to notice what is going on (when it concerns her) and has a hard time focusing on what is at hand. We turn up an aisle to get canned chilies (queso for the junk food on Sunday - yum), I notice that I went up the wrong aisle, she notices a man staring at her shoes. The mom of this young man (probably in his twenties) makes a comment about my race car driving son, we smile. The young man, Luis, introduces himself to my daughter. This is odd, but there is something about him that gives me pause to my initial reaction to any boy talking to my little girl.

"Are those  Converse?" he inquires of my daughters shoes. My daughter has this throw back thing going on. I don't know why, but Converse she has. This young man was very excited to see them and talked about how popular they were in the eighties.

"Hi, I am Luis," he says as he sticks out his hand to shake hers. Then he says, "I have something for you." The mom quickly adds to me that he is getting a candy. Sure enough, he hands Actress a mint. And the mom and son walk off. Time stopped, chilies forgotten, a moment passed.

We continue on. Throwing stuff in the cart. Sending my poor daughter all over the store because I forgot to pick up stuff. Thinking of what I need to do next and hope I have the time as it is becoming obvious that I can't get everything I need from this one store and have to go to another store afterwards! Finally time to checkout.

I see in a short line where Luis and his mom are checking out. We get in line behind them. Luis comes up to me, "Hi, I'm Luis" and he holds out his hand. I shake it, giving him my name, and his mom reminds him that we have already met. He looks at my daughter and remembers. Then he and I have a conversation about a necklace I was wearing. It reminds him of Hollywood. Am I from Hollywood? No, born and raised in New Mexico. He loves New Mexico. He once lived in Florida, but prefers being here. Then he looks at me and opens his arms wide, "Happy New Year and God Bless you." What a caring young man. He gives me a candy and tells me that I remind him of a friend he had in junior high. "But I never went to high school, because I had an accident that caused a brain injury." Ahhhh, that explains his incredible forwardness.

After reminding him that my boys don't really need a mint, he tells me that his job in life is to make people happy. Moment passed. He and his mom head off to their car. I see him introducing himself to the bagger and gives her a candy. I just smiled. I smiled through the incredible slow checkout. I smiled all the way through the other store. I find myself still smiling over this young man.

Luis, may the God of time and moments give you many more opportunities to make others smile!

A Description By Any Other Name ...

Wouldn’t you like to be grounded? Not the kind of grounding that takes teens away from life sustaining needs: telephone, Internet, music, friends. Grounded as in who you are and what you believe.

 

A good friend of mine described another friend of mine as “grounded.” Wow! It struck me as an awesome description. My friend is a strong woman of faith and conviction, thus grounded in who she is and what she believes.  Any other description would be flattering, but this one had such power behind it. I could see her as strong in her faith, centered on her God, focused on her mission, and sure of herself as a woman of God. What an inspiration!!

 

Webster’s 1828 defines ground (noun) as “… Foundation; that which supports any thing. This argument stands on defensible ground. Hence, … Fundamental cause; primary reason or original principle. He stated the grounds of his complaint…”

 

Foundation. Support. Fundamental cause. These are strong words, worthy of consideration of their definitions and meaning.

 

Webster’s 1828 defines foundation as “… The basis or ground work, or any thing; that on which any thing stands, and by which it is supported. A free government has its foundation in the choice and consent of the people to be governed. Christ is the foundation of the church. Behold, I lay in Zion for a foundation, a stone - a precious cornerstone. Is. 28. Other foundation can no man lay than that which is laid, which is Jesus Christ. 1Cor. 3. … Original; rise; as the foundation of the world. … Establishment; settlement…” A foundation is that upon which a thing is built; an idea or tangible building or even a belief. A foundation must support that which is built upon it. Otherwise the building falls and the foundation is destroyed.

 

Support is equally as strong a base as foundation. “… That which upholds, sustains or keeps from falling, as a prop, a pillar, a foundation of any kind… That which maintains life… the maintenance or sustaining of any thing without suffering it to fail, decline or languish; as the support of health, spirits, strength or courage…”

 

Fundamental cause in the Principle Approach is that which is causative, primary. What in “grounded” is the primary, the cause? I believe it is knowing, really knowing, what you believe. I don’t think you have to understand everything in the faith, rather you must be assured of your faith. I don’t have to know exactly how Jesus was raised from the dead to be know that He DID raise from the dead not only in spirit, but also in body.

 

In describing my friend as grounded was saying more than she is a good mom and a well-rounded Christian woman. She is someone to look up to. Her children have a strong foundation and will have that support as they grow. Her God strengthens her and sustains her in faith and life as she seeks Him. She is solid, steady, strong.

 

Descriptions of people occur daily. What is this person like? How do you describe that person? Nice, kind, pretty are fine, but lack luster and power. However, how many people could be described as grounded?

 

Knowing who I am and in whom I believe; giving my family what they need to support their health, education, spirit, and courage; providing a strong foundation upon which my kids will build their lives and support their kids is admirable and desirable. I want to be grounded! How about you?

Here is a fundamental Biblical Principle. The Principle of Self-Government. Our bodies are our responsibility NOT the governments. God has given us in His Word and in His Creation those foods we need for the good of our body as well as instruction for the nutrition and medicine our bodies require for proper functioning.

Have you noticed that the food pyramid has changed fairly recently? The government doesn't have all the answers. They can only look at current research and hope it is the most complete view of nutrition. Look to God. He created your body and your children's bodies. God knows how your cells work and move - they do so because of Him.

This is the essence of the Biblical Principle Approach - seeking God in ALL subjects, even our health and nutrition.
