My Rosemary Bread

Ingredients:

2 and 1 fourth-2 and 3 fourths all-purpose flour

2 packages active dry yeast(1 packet =2 and 1 fourth teaspoons)

1 Tablespoon snipped fresh rosemary or 1 teaspoon dried, crushed rosemary

(I like to use dried, crushed Thyme if I don't have rosemary)

1 and 3 fourths cups milk

1 fourth cup packed brown sugar

3 Tablespoons butter

2 teaspoons salt

2 cups whole wheat flour

1 slightly beaten egg white

----------------------------------

You can make this bread in a bread machine or by hand.I prefer the bread machine.

If you make it by hand...

1.In a large mixing bowl combine 2 cups of the all-purpose flour, the yeast, and snipped or dried rosemary;set aside.

In medium saucepan heat and stir milk, brown sugar, butter, and salt just until warm and butter almost melts.Add milk mixture to dry mixture.Beat with an electric mixer on low to medium speed for 30 seconds, scraping sides of bowl.Beat on high for about 3 minutes.

Use a wooden spoon to stir in the whole wheat flour, and as much of the remaining all-purpose as you can.

2.Turn dough out on a floured surface.Knead to make a moderately stiff dough that is smooth and elastic.Shape into a ball, and place in a greased bowl.Turn it over once, and cover to rise in a warm place till doubled in size.(1 -1 and fourth hours)

3.Punch dough down. Turn out onto a lightly floured surface, and divide in half.Cover and let rest for 10 minutes.Lightly grease a large baking sheet.Shape each half into a ball and place on greased baking sheet.Flatten balls till they are about 5 inches in diameter.

4.Mix egg and 1 Tablespoon water;brush on loaves.

Cover to rise another 30 minutes.

5.Brush loaves again with egg mixture.Bake in 375 degree oven for 30-35 minutes or until done.

(Cover with a sheet of foil the last 15 min. to prevent over browning.)

If you make it in a bread machine...

Place in dry ingredients in order.

Mix the milk, butter, salt, and brown sugar the same way in the saucepan, and add to dry ingredients.

Don't forget the whole wheat flour.

Then turn your bread machine on the dough cycle, and let it do all the mixing rising work.

When the cycle is complete, turn the dough out on floured surface, and shape into balls, (same as above) and let rise another 10-20 minutes.

(Don't forget to bruch with egg mixture!)

Bake the same as above.

And...Bibbity Bobbity BOO! You have  beautiful loaves of Rosemary bread!!
