Menu for Hard Times- Day 2

Okay- here we are 8am on Day 2-- and these are the instructions:

Tomorrow morning you will be making bread, so we will start it tonight. Take out your starter. Take 1 egg out and put it into a glass of hot tap water (do not crack it). Warm some milk, perhaps 1 quart, not hot just warm. Now get out a large bowl. Take three quarters of your starter and pour it into the bowl. To the rest of the starter add a cup of flour and a cup of milk. Put this back in the refrigerator. To your starter in the bowl, add your egg, 1/4 C oil, the warm milk, 8-12 cups of flour (start with 5-6 cups and add a little at a time until the dough is the right consistency), and mix and knead well. (Another word for beating the heck out of the dough: excellent stress reliever! No wonder our foremothers rarely got anxiety attacks!) Allow to rise in a warm place overnight.

I am not doing the Sour Dough bread-- I do have "my" WW bread mixing in the breadmachine as we speak though--

Next on the instructions:

Day Two

Breakfast- Oatmeal and bacon
Right now apples and pears are getting ripe across the country. Perhaps you know of someone with apple trees or pear trees. Many times people don't do anything with them. Ask around and you are likely to find someone who would love to have someone glean their apples. It would be a good outing for the kids, and would help remind you of the wonderful joy that God has for us through his creation. Bring them home and cut them up and make applesauce, and apple pie, and apple muffins, and apple juice.

Punch down your risen bread dough and form into loaves. Let rise again for the morning, then bake at 350 degrees until golden brown. Now for lunch you have left over beans and fresh sourdough bread. After lunch take a ziplock of chicken out of the freezer.

Okay- so it will be oatmeal and bacon for breakfast-- easy enough--

I am really surprised at all the bacon--  When I think of bacon I think of FAT-- not protein or anything else-- but goodness-- that is hubby's FAVORITE part of this "experiement".  He loves bacon-- and I try to really keep it for 1x a week...not this week though, I guess!!

I live in APPLE COUNTRY--but it is NOT apple season-- as a matter of fact our local orchard is VERY low on apples right now-- HOWEVER-- Jason said when he mowed the grass he could see the berries-- and there should be a VERY GOOD HARVEST today when we go picking--

Then leftover bean soup (or in this case some 'new' bean soup) is on the menu for lunch w/ the bread.  Easy enough!!

Well it's almost 2pm time for a quick update--

Breakfast went well-- didn't take a picture-- you all KNOW what oatmeal looks like-- I did sweeten with a bit of maple syrup and brown sugar (on hand staples) and the boys put blueberries (freshly picked) on theirs.  Plus everyone had their 2 slices of bacon-- and the boys said "Mom, bacon today..we had it yesterday..is this okay?"  (they know me so well)

We then went and picked another pretty large bowl of raspberries-- thinking of making a raspberry/cherry pie as soon as I get off here....  yummmy

Lunch-- well I forgot to turn the beans UP on the crockpot (it was on keep warm) so we had them all dished out and started eating and the beans were HARD...  .  No worries-- we just took the FRESH SOFT DELICIOUS homemade bread and made peanut butter and jelly or peanut butter and honey sandwiches-- they were DELICIOUS..and filling-- even if the boys did have room for a cupcake!!

Let's see what's next:

About  2 hours before dinner, put the chicken in a large pot to boil. Simmer one hour, and then take the chicken out of the pot and take it off the bone. While you are deboning the chicken add a little water, and one chopped onion, and salt and pepper to your broth. Simmer while deboning. Now put your chicken back in the broth and make up a batch of biscuit dough. Drop the dough into the water about ten minutes before you serve your chicken and dumplings. Put a lid on the pot and leave it until serving time. Turn off the burner and serve your family a meal. Save the leftovers Now notice I don't mention vegetables. If you have some use them, but keep in mind that there may be other recipes later in this incredibly long e-mail that call for them.

Okay-- the chicken is on to boil--- I bought 4lbs of split chicken breasts-- and that is only 4 breasts?? I didn't realize that till I got them out of the bag-- should be an interesting week!!   I will also have an eye on THIS recipe as I am making this.....

I will be putting some frozen veges in with the chicken (I have a stocked freezer)....You know I need to look THIS over and see if I can figure out my REAL cost per day....

Okay-- I better get going--- Can you belive the last 2 days I have also been SUPER on top of things--

The one thing I have noticed is a LOT more dishes-- I have had to do them 2x a day (and my dish put away-er -- aka Zachary-- is not thrilled.. but is being a trooper)

This little "experiment"  has MADE me be organized--- and the boys have REALLY helped-- we have even gotten SCHOOL work done-- I didn't think we would!    The ball that is on the ground (I always say-- I have so many balls to juggle-- there are always 1-2 on the ground--) is A GOOD HOUSE CLEANING-- it is not cluttered--but it is not CLEAN.....how did women do it???

Oh and in case any of you think I have lost my mind (and maybe I have) I just remembered THIS little experiment that Like Merchant Ships did earlier this year--its a MUST READ if you find any of this interesting-- check out HER menu!!    (Its best to read her entry BACKWARDS--the bottom one first).

Okay-- the day is done-- it is almost 8pm-

Dinner-- it was pretty good-- the boys turned their noses it at-- they were NOT impressed-- but it was definitly edible!!  

The pie at the end was MOST definitly the highlight though!!  I followed THIS recipe kind of-- I made it with a mixture of cherries, blueberris and raspberries.... with a crumb topping.  * Please do not take too much notice to the fact I do not own a pie plate---- oh well this works**

Day 2 is ended with this in the "original plan"

Now take a walk outside. Sit by yourself somewhere, and just breathe. Hopefully hubby is home, and all is well. Make a list of how God has blessed you today. Remember those adorable things the kids did. Now get a good night's sleep. I always read my bible at night. After the labor of the day is finished I can take all my cares to the Lord.

That is how I ended my day-- unfortunately saying "good night" to my husband as he left for work early tonight-- but definitly remembering the adorable things my kids did today---  (2 showers were needed today---if that says ANYTHING!!)

I really am exhausted tonight- as I was picking berries today-- I really felt I was "waddling" anyone who knows me knows I am tall and enough and big enough I don't normally waddle-- but this baby is in an odd low position---and I feel like I am just waddling around everywhere-- TOO early to waddle-- I still have 11 weeks to go!!!  

Okay-- here is my delima--

This is how DAY 3 reads:

Day 3

You more than likely had leftover chicken and dumplings. Breakfast is toast (made with homemade bread) with peanut butter, and a little bacon.

Lunch, take some frozen veggies(broccoli would be excellent). Take a deep casserole pan, fish out all the leftover chicken out of the chicken and dumplings. Put one cup of rice, and one cup of broth (conserving the rest), and one cup of water in the casserole with the chicken and half a bag of broccoli. Season to taste, and bake covered for 1/2 hour. Uncover and sprinkle a little of any kind of cheese (if you have it, if not omit) Serve this for lunch.

The delima?  Sundays are our DAY OF REST-- We take it seriously---- we rest-- usually we have an easy breakfast-- and sandwiches and chips for lunch and frozen pizza for dinner (due to our pm church service starting at 5pm).  Not sure if I will put Day 3 on hold for Monday-- so I can REST on Sunday-- or not-- we'll see how tomorrow goes--  WOULD THAT MEAN I BLEW IT FOR THIS EXPERIMENT??

Go easy tomorrow after all that cooking. And NO, you have definitely succeeded! You should have a great sense of accomplishment even after just a couple of days. :-)
