Whewww---that was just the CORN!!

Let see-- starting at 11 am (actual working on the corn) and ending at 5:45pm... I have 32 Quarts of corn done!!!

When hubby first came home--I was so excited to get started--- and he wanted to take a quick nap-- so he took a nap and I headed down stairs to see if I could find any jars for canning salsa and things..... and LOOK what I found----

That's not even counting the 2 boxes of Maynaise jars--which i got rid of---- WOW!! I was so surprised---( I totally forgot I bought these from my friend when she lived nearby and had a yardsale-- I think they were her moms--- Can you beleive I just dug these out???  So embarassed).
My HELPERS helped me get them washed and dried......
Not sure which is wetter-- the screw bands or Joshua???
So at 11 am-- we headed outside under the shade tree and began to husk the 20 DOZEN ears of corn we had---- It filled a plastic tote and then some!!!
Then we began boiling it-- It took about 25 minutes per batch to get it ready.... (this was the biggest time consuming issue)
By 1 pm-- I lost my 2 helpers-- that's okay-- they were REAL troopers during the washing jars and husking corn work!!
By 2pm-- hubby needed to get to bed-- so I was left to cut the corn off the cob and bag it up.... Nice little assembly line of sorts:  (one little helper is always by my side....  except his nap time of course)
And by 5:45 I had 32 Quarts ready to be put in the freezer!!
Hubby was very thoughtful and ordered 2 pizza's at lunch time-- one for dinner and one for lunch-- so that was nice-- because I was well on my way to being DONE!!
And yet-- tomorrow-- I still have much MUCH more to do......  (smile-- it's a blessing)
Needless to say-- I'm ready to go to bed tonight-- Stephen hasn't slept well--TEETHING-- and so I am hoping tonight will be better!!

Girl, you are superwoman! Not only getting all that done but taking pictures and posting them to boot! That is amazing.

I want to come to your house for dinner.

Oh, how I miss my mom's homegrown frozen corn! We planted corn this year, but the winds and all the rain ruined it... along with our tomatoes. There's not much better than fresh corn-on-the-cob & tomatoes during the summer... except pizza, of course. :-)

I'm looking for something to do with my tomato garden (still mostly green!). The salsa will be a great idea! I just got done my peaches, peach jam and blackberry jam. I'm doing pears any time now! Have a great day! Blessings, Kelly

I can't believe you did that while having your kids by your side and pregnant! What an accomplishment! I wish I lived near you to can with you. It so much more fun when you have an assemply line with a friend to talk too. Our corn and tomatoes are not quite ready. I can't wait though. I hope I get the freezing and canning done and not let any food go to waste!
