I think I may have stumbled accross a great idea! I'm making granola and I realized that I'm still out of cinnamon. I'm also out of nuts! Great! Now what am I going to do?
Then I remembered that I have black walnuts in my freezer! (I really don't like walnuts, but these came with the freezer [another story for another time!] and have been sitting there ever since) I thought, OK, I could put just one cup of b. walnuts in. I then started thinking about what spice I could use to cover up the taste of the walnuts! :) I decided on cocoa. Not a spice, I know, but it sounded kinda good, and I figured if Toby and I didn't end up liking it, the kids would eat it! :) So, I haven't baked it yet, but this is how my adjusted recipe turns out.
Chocolate Granola
6 c. rolled oats
2 c. flake coconut
1 c. black walnuts
5 tsp. cocoa powder (more could be added according to taste)
1 tsp. salt
1/2 c. butter (one stick) - melted
3/4 c. honey - warmed
Mix dry ingredients in large bowl. Pour butter and honey over oat mixture. Stir well. Divide into two 9x13 pans or two jelly roll pans(cookie sheet with lip around the edge). Bake at 350 deg. for 15-20 min., stiring once or twice. Remove from pan after five minutes cooling to airtight container(leave lid off until completely cooled). Enjoy warm or cooled!
