Sealing Bags

You can seal any plastic bag by placing a piece of aluminum foil over the end to be sealed and running a hot iron over the foil. Make sure you have foil on both sides of the plastic to be sealed so it doesn´t stick to the ironing surface. No expensive sealing gadget required.

What Would You Do ???

Well , finally after several hours of no progress the learning wheels are back to rolling. Both of the kids have hit a few weeks of rebellion in the learning department.  Getting them motivated has really been a major undertaking these last few weeks.

We have not had the extra money to do any extra (out of home) activities. I know this would help their focus.  Hopefully the new year will bring better finances and we can do some educational field trips.

I would love some feed back on this. 

1. Do any of you have problems getting the kids to do their learning ?

2. Do you do all subjects everyday ?

3. Do you have days of being so overwhelmed and question your sanity for homeschooling...lol ? 

Anything you could add or suggest would be most appreciated.

Candied Apple Pie Cheesecake

Candied Apple Pie Cheesecake

10 servings
What You Need
 
1 cup crushed NABISCO Ginger Snaps
3 Tbsp.  butter, melted
1/2 cup plus 2 Tbsp. sugar, divided
2 pkg.  (8 oz. each) PHILADELPHIA Cream Cheese, softened
2 tsp. vanilla
1/2 cup  BREAKSTONE'S or KNUDSEN Sour Cream
2 eggs
1 cup  apple pie filling, divided
1/2 cup PLANTERS Walnut Pieces, divided
1/2 cup  toffee bits, divided
Make It
 

HEAT oven to 325°F. Mix crumbs, butter and 2 Tbsp. sugar; press onto bottom and up side of 9-inch pie plate.

BEAT cream cheese, 1/2 cup sugar and vanilla with mixer until blended. Add sour cream; mix well. Add eggs, 1 at a time, beating just until blended after each. Stir in 1/2 each pie filling, nuts and toffee. Pour into crust.

BAKE 35 min. or until center is almost set. Cool. Refrigerate 4 hours. Top with remaining pie filling, nuts and toffee before serving.

Prepare using chocolate-covered toffee bits

Thrifty Tuesday

As a Mom who uses an eclectic curriculum I felt like I had hit the curriculum "motherload" a while back. I stumbled upon Amazon.com and their used books. I was able to buy books in all subjects (both children) for $113. I was amazed at the variety. So I thought I would share . Nothing like saving some money...lol

Pumpkin Roll....yummmy

Pumpkin Roll with Vanilla Cream and Caramel Glaze

Ingredients:

FILLING
2/3 cup Crisco® All-Vegetable Shortening
1 stick (1/2 cup) cold butter, cut into slices
3 cups powdered sugar
1/3 cupPET® Evaporated Milk
1 teaspoon vanilla extract
Pinch salt
1 teaspoon pumpkin pie spice (optional)
 
CAKE
1/4 cup powdered sugar
Crisco® Original No-Stick Cooking Spray
1 cup Pillsbury BEST® All Purpose Flour
2 teaspoons pumpkin pie spice
1/2 teaspoon baking soda
1/2 teaspoon baking powder
4 large eggs
3/4 cup sugar
1 cup solid pack pumpkin
 
TOPPING
Smucker's® Caramel Sundae Syrups Ice Cream Topping
1/4 cup sliced almonds, toasted*

Directions:
  FILLING
1. COMBINE shortening and butter in a small deep mixing bowl. Beat with an electric mixer on high speed until smooth and fluffy. In separate bowl, combine powdered sugar, evaporated milk, vanilla, salt and pumpkin pie spice, if desired, on low speed until well combined. Add shortening mixture to powdered sugar mixture. Beat on high speed of mixer just until stiff peaks form. Cover and refrigerate.
  CAKE
1. HEAT oven to 375°F. Sift powdered sugar generously over clean towel. Spray 15 x 10 x 1-inch jelly roll pan with no-stick cooking spray. Line with wax paper and spray with no-stick cooking spray.
2. COMBINE flour, pumpkin pie spice, baking soda and baking powder in small bowl. Beat eggs in large bowl with electric mixer until thick. Gradually add sugar and pumpkin, and then flour mixture. Once flour is incorporated, beat 1 minute more. Spread batter evenly into pan.
3. BAKE 9 to 12 minutes or until toothpick inserted in center comes out clean. Immediately loosen cake around edges and invert onto towel. Carefully remove wax paper. Roll cake in towel beginning at narrow end. Cool cake completely on wire rack.
4. UNROLL cake; spread filling evenly to edges of cake. Re-roll cake; wrap in plastic wrap and refrigerate several hours before serving.
  TOPPING
1. DRIZZLE cake with caramel syrup and sprinkle with toasted almonds. Serve slices with additional caramel syrup.
TIP To toast nuts: Place almonds in dry nonstick skillet; cook over medium heat, shaking pan until nuts are lightly browned.
Yield: 10 slices

Thanksgiving Traditions

Out with Halloween and in with Thanksgiving. I am always searching for educational resources . Today while searching for fun Thanksgiving resources I came across this really cool article. I just had to share it.

This article from http://www.familyeducation.com/home/ really hit home for me . It has been just over a year since my dear Grandmother passed away. Granny ( as we lovingly called her) was the hub of our family and loved her family being close. I think the "Talking Fork" could be a new tradition for our family and one that could help keep my Grandmothers memory alive.

Thanksgiving Family Activity:
Pass the Talking Fork!

Before your family leaves the dinner table this year, raise your fork and demand a story! Try this conversation-starting activity.

Start a New Tradition

This old storytelling game has been around forever, but it just might do the trick when the kids have cleaned their plates and are ready to fly out the door again.

Just ask: "Did everybody use a fork?"

They'll all nod.

"Good. If you just used a fork, then you owe the cook a magic memory. I will now unveil The Talking Fork."

Puzzled looks will follow.

"I cooked this meal. And before we all leave, I want to hear some good, fun, magic family memories. Here's the Talking Fork. I'll go first." Then pick up a fork around which you've tied a ribbon — a nice, big serving fork is good for dramatic effect — and begin.

A Fork with a History

This is a variation on the "Talking Stick," a very ancient human speaking tradition. In Homer's Iliad, warrior kings pass the ribboned staff, giving one another room to speak. Native Americans still pass the Talking Stick from storyteller to storyteller.

In any event, use a fork. It's only a symbol, but a potent one. You can say, "This fork, although it appears ordinary, for this meal only imbues the user with storyteller power. It gives the gift of the silver tongue. While you hold this fork, memories will flow through you. While you hold this fork, everyone will listen."

There's nothing a child likes better than having people whom he loves, especially adults, listen only to him.

Digging In

Mom and Dad, and grandparents if they're around, can model how it's done for the kids. Try stories about your childhood. The kids will love that. Or stories about how someone (great-grandparents, for instance) had quirks, funny sayings, or adventures. Or you can tell stories about your own children. How they behaved as tempestuous toddlers and the origins of their pet names. Or maybe what happened the day they were born.

Once the kids realize that telling a story like this is simply remembering things and talking about them in their own words, they'll jump in.

Praise the Forkholder

Oh, and one other thing. Applaud as each person finishes, no matter what he or she says. Short story, long story, impressive story, or simply a wisp of recollection — doesn't matter. Applaud anyway.

Then sit back and enjoy the stories.

Ever Wonder How ????

Ever had something new you wanted to try  but had no idea how?  I  have more times than I can count.  It actually happened tonight.  Caroline received a rug  hooking kit quite some time back  but never  worked it.  Tonight she was  "bored"  and  I told her to go to the project box and find something to keep her busy. She pulled out the rug hooking kit. It would have taken a genius to figure out the instructions written on the box. We both tried it several times to now avail.  Finally Caroline asked " wonder if we could find out how on the internet ? "  Great idea and yes. All it took was googling "how to do a latch hook rug". Wala !!!  My first google hit was the one. It was an awesome How To web site. We were so awwwwed by the site. We learned how to french braid, how to do a french manicure and how to make a friendship bracelet. Well, I just had to share the web site with you all.
