Covered and Smothered Hashbrowns
This is based on a dish at a local restaurant. Sorry, but this is a free-form recipe. Cook frozen hashed browns enough for large servings per person. I usually shoot for about twice the normal amount. While those are cooking, peel and slice onions into half rings and saute until softened and starting to brown. Prepare cream gravy from scratch or from a mix. Grate some cheddar cheese. To assemble, place hashed browns on the plate. Sprinkle with cheese. Add sauteed onions to taste. Top with gravy. Serve with bacon and biscuits.
Yeah, I know it sounds like an odd combination of foods. My kids thought so too when I told them what I'd eaten. The first time I made it, I fixed one small test plate for everyone to try. They all loved it and will now ask for it if I haven't made it recently. Warning: This recipe is not low-fat, low-carb or adhering to the current USDA Food Pyramid. Eat at your own risk! :-) |
